I am potentially looking at getting a better camera than the one I have now. I found the Canon T6 with 18-55mm lens and 75-300mm lens. Does anyone have any feedback on this camera for plane spotting?

The only limiting factor with any DSLR is the user. The supplied lenses aren't great but will do a decent job if you learn their strengths and weaknesses. If you can, however, I'd try to replace the 75-300 with the 55-250 STM.

The Rebel T6 is fairly dated in terms of technology. I would actually consider buying refurbished; step up into something like a T6i, which has a better sensor with more resolution, autofocus performance and dynamic range for starters (plus a faster burst speed, processing performance, and a fully articulated touchscreen):

And yes, I would not get the 75-300; it's also a very dated lens and is easily outperformed by the newer 55-250 STM. Again, I would pick this lens up refurbished as well to keep it economical.
