Hello all,
I remember that long time ago there was in A.Net a thread dedicated to the topic of items plane spotters taking with them to such activity.
Unfortunately, I couldn't find it or something similar to this topic. So how about starting a new one?
So here is what I take with me:
My bag is Lowepro Fastpack BP 250 AW II
1. EOS760D body
2. Cannon 18-135 IS + hood
3. 70-200 L non-IS + hood
4. memory cards: 8 GB, 32GB and micro 32GB
5. Lenovo T440p laptop
6. Lenovo Tab2 tablet
7. HTC M9 cellphone
8. Scanner + Batteries
9. GPS logger
10. Slick Propod 660 monopod
11. Remote control for my camera (cable)
12. Chargers: laptop, tablet/cellphone, camera
13. various cables
14. small notebook (paper)
15. Pen
16. Keys
17. ID card/passport
18. small amount of money
19. Bottle of water
20. Hat
Please note that some of these items are needed only during long trips or out-of-the-country trips

Usually when I am in my home country I'll only take my camerabag with me. By default, that consists of:
1. Camera
2. Lenses
3. Memorycards
4. Batteries
If I'm abroad or spending a long day at a home country airport, I will usually also bring:
5. Drinks (water, sometimes a soft drink/juice)
6. Food (sandwiches and snacks)
And if I'm out at night:
7. Tripod & shutter release cable
I consider my keys, wallet (money/ID) and phone items that I carry with me every day, not necessarily spotting related.

These days, I don't even typically bring my camera bag with me. Just camera (5D2) and lens (usually 100-400L), and extra battery and memory card in my pocket.
Tripod and shutter release typically live in my car's trunk, so they're always available should I need them.
The only time I'll bring a bag is if I think I'll need more than one lens, filter(s), or any other random thing, but that's pretty rare for spotting sessions these days.

Exactly like Vik, I Keep it simple. No special camera bag, Just a camera in my bagpack with maybe another objective (depending where I want to shoot) and another battery.
Nothing more.
If I will shoot just one aircraft inbetween something else I might even just get in the car with the camera in my hands and nothing else.
I tend to leave everything that I don't need (other objectives - tripod, shutter release which I both don't use at all these days) at home. I would't want to carry evertyhing else with me, especially as I might also take the bike to the Airport.

For me I always just take the bag with me which is a book bag style gear bag. Usually have the 6D mounted to the 100-400 as my go to. Sometimes I might mount the 7D2 to the 100-400, especially if I am shooting EWR 22 departures. For me with traveling a lot it makes it easy to keep everything together in the bag.
The bag will always have my 70-200, 1.4x III extender, 24-105, 35mm f2, the mounted up body and the extra body. On one side pocket the scanner is clipped on and on the other side pocket the extra batteries are kept. The front of the bag will have my caps/covers and spare memory cards.
Now when I am on vacation and not doing aviation it will usually be a smaller bag with a spare battery and card, body, 24-105, 70-200.

If i take a trip to other places for spotting , i will take 100-400mm replace the 70-200 and also take 24-105 and maybe will take another APS-C camera with me (700D) because maybe i am not familiar the situation there longer lenses are better than short lenses.Besides, i will also take more than 2 spare batteries . And... memory cards i will bring 2 8G or 1 32G.
If i go spotting at night time. I also will bring Tripod and shutter release cable. In addition, i will bring 2 more batteries because i found that my batteries are not very durable maybe is too old.

My Crumpler camera bag contains:
- Camera - Canon 5D Mark iii
Lenses - Canon EF 70-200mm f/2.8L IS II USM, Canon EF 24-70 f/4L IS USM, Canon Extender EF 2x III
Memory card - 2 x Lexar 128GB Professional 1066x CompactFlash and reader
Scanner/Radio - Uniden UBC-75XLT
Laptop - Macbook Pro
Accessories - Lens filters and blower
Other - Suncream (even in the UK I've learned the hard way that standing for 8 hours outside can get your face red). Food/drink. Notebook/pens. Battery charger if im overnighting.

The airport bag (Calumet Pro 845 - just about goes under an aircraft seat on its side) generally contains

iphone with FR24/ADS-Bexchange. For uploads of photos to social media. Don't paper log, it's a screen-grab these days. Not that serious about logging any more, tbh.

I'm not usually at the airport long enough to warrant drinks or snacks (8am-2pm or so). Maybe water in the summer.

I am travelling now to the Baltics and Kiev and am interested to know what other spotters are using so i can have ideas what to add.

I am taking my Vanguard Up-Rise 16Z bag with one camera with battery grip and one lens mounted and enjoying being light
