Why are different sections of the forward
overhead panel on the 737 colored in different shades ?
Some of them are very light and others are grey

I believe the light colored areas are controls that need to be properly configured for the aircraft to fly, such as electrical busses, hydraulics, pneumatics and fuel pumps. Most of the controls on the grey panels while important won't prevent the aircraft from flying. There are a few controls on the grey panels that have to be in their normal position for the aircraft to be operated, these have red or black safety covers over the switches. If the cover is closed the switch is in it's correct position, pilots generally never need to touch these controls.

Too late to edit previous post. The controls under the red and black safety covers are things like emergency back up systems etc.

I am very curious about this too.
Almost 30 years ago when I flew the 737-200 (same overhead panels), I asked a check captain that very question. His answer was that during an engine out situation, it is those panels that need to be addressed and adjusted first. Respectfully, I said nothing, as even 30 years ago, the QRH addressed any electrical, pneumatic, hydraulic and fuel switch adjustments. But I was sceptical.
Still ... I have always wondered.

Also the Australian airlines IIRC did not have two colors, just one on at least their 737 Classics and New Gens.

That's a B737-300 series, Those mismatched paint panels are more than likely (Highly unlikely) NOT to be the original panels the airplane was delivered with.
Not all repair / overhaul vendors are going to paint their panels in the original Boeing Grey.
Especially since it makes little or NO difference to the operation OF the panel.
I'm sure the pilots don't care as long as they work as advertised.. Y'think?? Aside from the fact the airplane might be 20+ years old.

At United all of our B737-322's and -522's were delivered with the same colored Panels originally. Unce they started getting replaced?
The Grey's might have come back different on some of the face plates. But we had a shop that painted them as well. Not many other airlines
have that option so for them to come back different? is of little or no consequence. I'm not even sure if We still do it.
I have had pilots in the past who would write it up if they were not the same color. Worse than That?
We would fix it!!

The lighter panels are those systems affected by pulling an engine fire handle. Left to right fuel, electrical, hydraulics, pneumatics.

The Primary Flight Panels as stated by 7673mech are also the 4 systems affected by the fire handles.
