Safety/security of companies who prepare inflight meals?

A couple of weeks ago I flew from MIA to Sao Paulo and back on American Airlines. All of the inflight meals tasted good and the food seemed pretty fresh. Got me to thinking though...what kind of security and safety procedures (worldwide) are in place to insure that airline meals are safe to eat and the food is not tampered with by those who might want to poison passengers and/or flight crews? Are there some kind of international standards or do regulations regarding the handling of food by catering companies and airlines vary greatly from company-to-company?

Food security is taken as seriously in the food manufacturing sector as airport security when you are a passenger. External auditing agencies such as the AIB or a government agency like the FDA can be asked to audit and approve your site, systems and procedures as well as your own internal lauding systems of secondary and tertiary suppliers to make sure that everything is correct and safe. Any company that supplies airline food will likely have audits done at the behest of the airline including random ones where they just show up. If you don't let them in then you fail. Whilst the airline probably won't know the exact procedures the auditing company will be highly accredited and work with the airline to determine appropriate levels and risk and quality adherence.

The company I work for manufacture French fries and we would be able to tell you who grew the potatoes and who was in which bits if the factory when your fries were made and we would have videos to show who was doing what. Every ingredient comes with a paper trail.

There is as much risk in food safety as there is in airline safety, we all eat multiple times a day, flying is rare.

Also physical security of sites producing catering food for airlines is about the same as for the airports airside area. If production is off-airport, transportation vehicles are also temper proof sealed.
