Amsterdam Layover

Ill be flying YYZ-AMS-FRA in May (KL692 and KL1765) giving me a 3:20 layover. I know the observation deck is pre-security, but will I be able to access it after going through customs/immigration before my flight to FRA?

Also, nn the way back I'm doing VCE-CDG-YYZ with an almost 5 hour layover, what's good to do in CDG during that time?

Oh yes, plenty of time to do so. Note that your flight Amsterdam - Frankfurt is within Schengen, so you won't have to bother with customs/immigration on that one. Once passed immigration in Amsterdam it's valid for the whole Schengen area.

As far as I know Charles de Gaulle is a pretty boring airport for a layover, but perhaps you can pay a quick visit to the city of Paris and see the Eiffel tower.

There is also a small outside observation deck available airside. You'll find it on the top floor of the D-pier. Compared to the bigger observation deck accessible for everyone the view is somewhat limited. But it still makes for a nice visit and some fresh air.
