It was the KEF of the Pacific, then came the B744 and the B777. It would be the Gander of the Pacific were it not for cargo operators. Tourism in summer, mostly.

To function as the KEF of the Pacific, they'd need the ability for passengers who weren't travelling to/from the USA to transit without passing through US Immigration. I've been told here before that ANC had that once, in the period before Russian airspace became generally usable.
Iceland doesn't require people to obtain and pay for a visa or visa waiver purely in order to change planes. Now since Iceland is in the Schengen Area, a lot of passengers do pass through immigration there, if their journey origin or destination is also in Schengen. But for those whose journey doesn't touch Schengen, there's no immigration at all at KEF, and even for those who do, it means they avoid immigration at their origin or destination airport.
ANC could replicate that for people who are flying to/from the USA, of course, but Canada or Mexico?

An advantage possessed by KEF is the ability to fly narrow body to smaller towns on both side of the ocean. There are barely any destination in Asian side of the Pacific reachable from ANC on a fully loaded narrowbody.
