This can't be said of the newer Boeing models that were built at that time (737NG, 777) - which are still going strong about 12-18 years later.

What decade is this? Being converted to freighters is not a bad thing and flying boxes is prestigious and good work for not only the airplane but the pilots too.
It's still 1989 apparently since the A320-200 is still selling in droves - hah.
Joking aside, the freighter conversion process for the 757 and 767 is pretty intensive and involves cutting away a very large segment of the upper lobe of Sections 41 and 43, as wells as replacing the whole entire flight control system and all fuselage wiring. I'm seeing a trend where airlines are retiring their '99-early 2000s builds before their older 757 and 767 frames, and since this is a very intensive and high waste-generating process, I'm wondering why these relatively young birds are getting the axe first.
