There was too much egg salad

I'm guessing egg salad is the same as what we call egg mayo here in the UK?

Basically hard boiled eggs mashed up with mayo, maybe seasoned a bit.

Mine was on buttercrust, with romaine hearts and sliced beefsteak tomato!

I shall have to try the curry powder...

However, I do not think chicken has Vitamin A in it. I have been researching the bejeebers out of Vitamin A since the eclipse, see; and it turns out you can get an appreciable amount o' Vitamin A from eggs. However, because they are of animal origin (gross) they provide whatcha call "preformed" Vitamin A, as opposed to plant-derived "provitamin A" which is evidently preferrable. The NIH says you can get too much preformed Vitamin A though I don't think they divulged what quantities of food you'd have to ingest to start causing trouble. But in any case if you eat a good quantity of carrots or mangoes, then you are getting good amounts of betamacarotene which, if what I've read is to be believed, your body converts right into Vitamamin A.

Not sure why it's better to do all that work of conversion yourself, when eggs and whole milk have the Vitamamin A ready for you in by-default-not-dangerous quantities, and THAT is why you should've made egg salad instead.

Curry. And I make my own mayo from scratch. To make a bit over one cup of mayo, put the following in a blender:
*1 large egg (very fresh).
*1/4 tsp dried mustard or 1 tsp dijon mustard
*Juice of one lemon

Turn the blender on medium-low and then slowly pour in a combination of 1/2C of light-tasting olive oil (with the bitter particulate from Extra-Virgin filtered out) and 1/2 flax oil. The pour should be slow, barely a trickle, and it should take about 60 seconds to add the whole cup.

Then I added a bunch of garam masala and curry powder. The oil tends to soak up spice, so you have to use a lot.

For this particular chicken salad, I used chicken breasts that I had boiled (I usually run them in the slow cooker on high for a few hours and then shred them, but the slow cooker was in use making brisket), celery, napa cabbage, red onion, diced tomato, a diced bell pepper, and a diced peach.

To make a buffalo chicken salad, add Frank's Hot Sauce instead of curry powder. A bit of blue cheese also helps that recipe.

I do mine like this: one egg yolk and one 1 tsp of Dijon Mustard (and Dijon only). I stir the two ingredients with a whisk and then add a continuous trickle of neutral oil, such as sunflower or canola, until I get the desired amount. Once the mayonnaise is done, I salt and pepper according to taste.

No full egg, no dried mustard, no lemon, no blender, and I would advise against olive oil as the taste is strong and bitter. Or, if I have to use olive oil, I wouldn't put any mustard. The combination must give a weird taste :ill:

Your mayonnaise must be such a sad, bland experience, tho. I'm so sad for you. :( As for the olive oil, you use the "Extra Light In Flavor" sort that's had the bitterness filtered out of it.
