Same reason all of the 'regional' offshoots exist - to pay a proportion of their staff less wages and give less benefits.

The key point is that BA aren't selling CW on that route, they are selling CE. Which as you know is an economy row with a blocked middle seat. That is the standard that BA will be held to.

Flyertalk can answer all these questions, there is a big thread on this. Basically yes overselling Y leads to upgrades into W. Some reports of status guests being allowed into W also. Club Europe is J on this flight, if oversold then F is also used as J.

The VS 744 is temporary back at LHR due to a temporary aircraft shortage as a result of a 787-9 tech and an A340-600 tech. I guess they are short of aircraft currently as some of the A333s are in for the J refit. DL is flying MAN - ATL on certain days of the week because of this.

Just because it's a vacation market it doesn't necessarily make it very low yield. Have you seen the economy prices in the summer months? The VS 744s are PE heavy and get good loads, for example.
