What an odd route; and one that I never knew existed... The longest 767-300 route is currently BCN-LIM, which is 6,225 miles (the flight number is LP2431). I wouldn't worry about any weight restrictions on your flight. LATAM knows what they're doing, and with such a long and thin route like GRU-LAS...

I noticed that flights from North America to DEL have somewhat long layover times in KEF (6 to 8 hours), arriving there around 4 to 5 am while the flight to DEL does not leave until 12 pm. (Layover time on the return trip tends to be much better, around 1.5 to 3 hours.) Would pax be okay with this?

If they keep growing well I could see flights to DUR or JNB. Durban has the largest Indian diaspora outside of India as well. EK also time their flights to connect with the sun continental bank of flights. Maybe 9W could funnel some domestic feed into a flight down south? Otherwise I definitely can...
