If I remember correctly, EK also had an order for the A340-600 (16 or 18?) until the actual performance of the 777-300ER made it obsolete. Just like orders for A330-300s and the first A350 orders that were cancelled, a lot of EK orders never materialized.

I'm not an aerospace engineer, but possibly the long-range, high cruise speed and high altitude Gulfstream business jets are not the ideal base for a lightweight regional jet. They would probably have to start from scratch.
On the other hand, Canadair did it with the Challenger.

I have the same body/lens combo for about a year now and have been very happy with it, the Mk 2 lens was in my case a huge improvement over my 15 year old Mk 1 version.
The 7D unfortunately tends to be on the noisy side - today I received my 7D Mk 2 which seems to be a bit better in that regard.
